It’s All About the Beverages, Baby

While I’m shaking off the winter slumber, my hot cocoa mugs and tea diffusers are about to take their places in the cabinet and get their own well deserved rest. Many a green tea and Abuelita got me through the cold winter days, but now it’s time to say goodbye (for now).

I’m not shy about my love of Trader Joe’s and when it comes to getting it right in the summertime beverage department, I love them even more. Pretty much every TJ’s original drink that has crossed my lips, I’ve loved. (Well, with the exception of one orange mango type juice, but everyone has a bad day, right?) Currently, I’m hooked on these three yummy little numbers:


Yes, we are talking the sweetest of sweet drinks including root beer, sweet tea, and orange cream soda (liquid heaven). And I know, I know, it’s almost a shame to not swig these straight out of the glass bottles but my favorite way to have them go down is over ice and through a colorful bendy straw.

These three offer amazing flavor and are made with natural ingredients like so many of my other favorite TJ’s creations. The sodas are even made with triple filtered water, because only once or twice would just be silly. 😉 I also know that it can be a challenge at times to find a cruelty free root beer, but no worries here with theirs. See, the label says it loud and proud:

I’m sure I’ll discover a lot more wonderful surprises in their aisles as the weather gets hotter, but for now these are top spots 1, 2, and 3. What’s your favorite summertime drink?

Doug Tacos

One of my new favorite shows is the Showtime series, Weeds. I love the characters, the out of control situations, and now I love these tacos. While the tacos don’t really have anything to do with the show, Kit Kat fondly named them “Doug Tacos” after Kevin Nealon’s character.

We love Doug and we love tacos, so this was naturally love at first bite. The other great thing is that these are super easy to make and after all is said and done, really darn cheap, too!

I present to you, Doug Tacos:

Doug Tacos

Kevin Nealon’s Chickpea Tacos a.k.a Doug Tacos

1 small onion, chopped
1 tablespoon olive oil
1 celery stalk, chopped
1 green bell pepper, seeded and chopped
1 15-ounce can chickpeas, drained
3 – 5 tablespoons salsa
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1 dash cayenne pepper, or to taste
8 – 10 taco shells

In large saute pan, heat oil over medium heat.

Cook onion, celery, and green pepper until softened. Add chickpeas, salsa, cumin, and chili powder. Stir and cook until warmed. Mash chickpeas slightly with a fork for better texture.

Fill shells evenly with mixture from saute pan. If desired, top with any of the following: chopped tomatoes, shredded soy or rice cheese, low-fat guacamole, shredded lettuce, hot sauce, or salsa.

A few notes: I didn’t use onion or green pepper when I made them but I’m sure they’d be a delicious addition. Also, instead of using store bought tortilla shells, I made them the way my Grams has made them for years: hot oil in a skillet. This makes them soft and with just a touch of crunch. Yum! As you can see from the picture, we added my famous guacamole and we also used some Chili Garlic Cholula for some extra spice. It’s my favorite!

The Doug Tacos will definitely become part of the dinner rotation in our house.

Kit Kat’s Guide to Awesome Vegan Cooking

So you’ve heard me talk about my sweetie, Kit Kat, and his newfound love for all things Vegan (yes, this includes yours truly!).

Let’s Cruise!

My sweetie, Kit Kat, has been on a number of cruises and I’ve loved hearing the stories about his many adventures on the high seas. I was a little sad, however, thinking there would be no way I could attend a cruise for fear there would be little more than a fruit tray and occasional gourmet bread with jam for me to dine on while aboard a ship.

Well, all that has changed! I’m so excited about this I can’t even tell you!

Thanks to the Happy Herbivore, I will be setting sail on my first cruise next year and I’m so thrilled! That’s right, seven gorgeous days in the Caribbean complete Vegan fare to make my tummy happy. Amy’s Macaroni and Cheeze

I am in complete love with a frozen dinner. You read right, I did indeed say a frozen dinner. I never thought I’d utter the words “love” and “frozen dinner” in the same sentence but never say never, my friends, because I am indeed head over heels in love with Amy’s Rice Macaroni and Cheeze. This stuff is simply amazing!


Take a good look at the picture on the box because that is truly what this yummy dish looks like after it has been prepared. Warm, creamy, and downright cheesy! It’s made with Daiya cheddar cheese (that yummy stuff is a post for another time, but soon!) and could easily fool anyone into believing that it’s actually dairy by its look and taste. I actually got some raised eyebrows at work while I was warming this up today. The looks that said “Hey, isn’t that girl a Vegan?!” Someone even marched over, picked up and box and started reading ingredients. 😉

So if you ever take any recommendation from me, please take this one: Go out and get some of this NOW! It’s super noms and you will not regret it. Oh, and extra special love to my pal, Keri, over at I Eat Trees for introducing me to this tasty little number. Keri, you are in the running as my new BFF for this. 😉

Sushi in the Park

I look forward to the noon hour every work day because that’s when I get to log out of Outlook and head to a nearby park with my sweetie, Kit Kat. We do lunch picnic style and enjoy a full hour away from the hustle and bustle of the cubicle nation.

The only thing that could make a gorgeous day even better is one of my favorite meals on the entire planet: avocado rolls with copious amounts of sushi. Since I’ve yet to dive into making my own, I’m thankful that Sunflower does the job for me.

I could eat mounds and mounds of that stuff every single day. Happy me.
